Find a balance of bright acidity and umami sweetness in their firm flesh. Take it further- Best served raw, lightly seasoned and drizzled with extra virgin olive oil. - If left to soften, these make a fantastic and simple pasta sauce. Simply cook down with a little salt and olive oil.
