£31.91 per kg, Based in the Po valley near Parma, the Valserena farm was first established in 1879, and to this day they have preserved the old traditions for making parmesan, mixing the previous evenings milk with the morning milk collected from their own herd. The cows, a rare breed of Brown cow, are born in the farm and live a happy life. Their high standard, varied diet consists of only what is grown in the farm, and this shows in the rich yellow colour and taste of the cheese. Valserena puts quality before everything else: the Brown cow produces far less milk than other milking cows, which yields only nine wheels of cheese a day, but the milk itself is truly extraordinary: richer, fattier and full of nutrients. The final result is truly magnificent: a deeply rich and sweet parmesan, with an incredibly creamy and moist texture.
